Paddlefish is a caviar of our own American paddlefish from the Yellowstone River in Montana. American Paddlefish is considered a cousin to the Caspian Sevruga. The caviar is comparable in taste, color and size to that of Caspian Sevruga caviar. These medium sized grains with dark to light gray colored eggs, is from the Polyodon Spathula fish which is not a Sturgeon. This caviar is appreciated by chefs and epicureans to be served on canapes or blinis or as garnish and for its very affordable price. Grey Pearl caviar has a delicious mild flavor with a pleasant smooth aftertaste - a real gourmand's choice. And since paddlefish populations are healthier and more numerous than sturgeon, this is also an environmentally responsible choice.
