Farmed - Aquacultured Caviar - Ossetra, Sturgeon, Kaluga, Sevruga | Culling roe from fish is a particularly brutal form of harvesting. In the past, and still done in the present, female fish are actually clubbed over the head to stun it and then harvesting the entire ovary. This ruins the fish for later reproduction. With more caviar being consumed every year this type of harvesting has significantly hampered the proliferation of specific types of sturgeon, prompting research into better ways of harvesting the roe. In some places, farmed caviar is produced by surgically removing roe, allowing the female fish to continue to reproduce later in life. |
