Native to the rivers and lakes of Illinois and Tennessee, the wild
Hackleback Sturgeon produce small, firm grains that are black in color. Compared to caviar of
Caspian Sea sturgeon (fish of the same family), it has smaller grains. This caviar has a smooth pleasant taste, grains are of equal size and shape, and it looks very beautiful.
